Carol Borba is Vice President, Innovation Manager at Mattson. For over 20 years, Carol has managed and guided clients through the new product development process utilizing Mattson’s food & beverage innovation teams.

Carol’s primary objective is to bring new business opportunities to life for food companies looking for growth. From conceptualization of new product ideas, to formulation and consumer testing, Carol’s work at Mattson has brought success to clients like PepsiCo, Kraft Heinz, Hillshire Brands, McDonald’s, ConAgra, Mrs. Fields, Smithfield, and Godiva.

As a Culinary Institute of America (CIA) graduate, Carol began her career at Gotham and Bouley restaurants in NYC and at the CIA-owned Greystone Restaurant in Napa Valley. Both of which provided a key foundation for her success in product innovation.

As an active member Chef Member of the Research Chefs Association and CIA Alumni group, Carol has spoken on food innovation at conferences such as IFT, RCA, and Iowa State New Product Insights Symposium. Periodically, she is a guest lecturer at the Culinary Institute of America.
